Girasol Pizza has its roots in the tradition of Chicago tavern-style pizza. This nod to the traditional style features a thin, crispy crust cut into squares, making it perfect for sharing and enjoying with friends.
Discover something new or return to a familiar flavor with us. Enjoy our signature pizza, Da 4 Stars, loaded on a crispy cracker crust with a classic combination of Sausage, Mushroom, Onion, Green Peppers, and Olives; also known as SMOG or SMOGO.
We are mobile! With 2 Ooni ovens, we can set up virtually anywhere.
A thin cracker crust with toppings cut into squares. We acquire the best produce from local farmers market , California olive oil, and premium cheese.
A shout-out to the Chicago flag, which features four red six-pointed stars. It is topped with a classic combination of mozzarella and pecorino cheese, sausage, mushrooms, onions, green peppers, and olives.

J.R. Chapman was born and raised in the Six Corners neighborhood in Chicago, Il. Influenced by his father, who cooked as a hobby, and by his mom, who was a wonderful cook, J.R. attended Kendall College in Evenston IL. to study culinary arts. He did his culinary internship at Mango Restaurant in Chicago. Working with some of the best chefs in the city, J.R. worked his way up in the world of culinary. He decided to take a job in corporate dining, which was a more family-friendly schedule at the time. J.R. was later asked by the same company to work in the Silicon Valley in California as a District Executive Chef and later as a Regional Chef for some of the largest tech companies in the USA. After 19 years of corporate life and learning many different cuisine cultures, he decided it was time to explore other possibilities.
And here is the possibility, pizza! Going back to his hometown roots, and after years of extensive pizza training and a recent Pizza University class, J.R. is eager to share what he has learned and what is close to his heart.
Born and raised in the Ravenswood neighborhood of Chicago and in the restaurant industry. Viviana grew up in the business back in the 80s and worked through it in the 90s and 2000's. She was exposed to some of the best and most prestigious restaurants in Chicago. She owes and thanks for the incredible exposure of this business to her family, especially her Abuelita, Mamma, and Pop.
Her experience range from serving to managing and later working in corporate dining for 10 years in Silicon Valley as a Director of Catering and Director of Food Service, creating unique customer experiences.
With the help of her husband and kids (ages ranging from 26 to 17), she decided it was time to move on, finish her degree in psychology/cultural anthropology, start a small business, and be more available for her children. Because ,why not?
Viviana started the little LLC of Girasol Concepts in hopes of continuing to grow experiences for others. Girasol Pizza is an introduction to their entity , thanks to her admiration she has for her husband, J.R., and his passion for their hometown favorites. It is a new, and sometimes scary, journey, but it's invigorating.
